Brew tea in hot water and let it steep for about 10 minutes. Place a plate over the mug while steeping to keep all of the oils from the herbs in the mug and tea rather than escaping with the steam. Add honey to sweeten after steeping and the tea has cooled. The beneficial properties of honey will be destroyed at high temperatures. If it's too hot to drink, it's too hot for honey.
Lavender & Lemon Balm Lemonade
1 teaspoon of dried lavender 1 tablespoon of dried lemon balm 8 cups of water 2 cups of sugar 1 cup of fresh squeezed lemon juice
A summer time favorite with the calming combination of lavender and lemon balm.
Combine water and sugar and heat the water to dissolve the sugar. Once the sugar is dissolved, turn off the heat and add the dried herbs. Stir to mix and then let the mixture steep for at least 30 minutes, but best to let it steep until the mixture is cool. After steeping, strain the mixture to remove the herbs. Discard the herbs. Once the mixture is cool, add the lemon juice and mix well. Serve over ice and then sit back, relax, and enjoy.
